Spaghetti carbonara percal step by step
- In a large skillet heat the oil and butter over medium-low heat until the butter is melted.
- Add the onions, garlic, ham and bacon.
- Cook covered stirring ocasionally until the onions are soft about 25 minutes.
- Increase heat to moderate high and cook mixture uncovered stirring constantly until most of the liquid has evaporated and onions begin to brown about 10 minutes.
- Add wine or apple juice and stir scraping up the brown bits at the bottom of the pan.
- Add the broth and the bay leaf and simmer stirring until mixture is reduced slightly about 8 minutes.
- Add cream salt and pepper to taste and cook stirring until thickened.
- Remove skillet from heat and discard bay leaf.
- Stir in cheese and keep sauce warm and covered.
- In a pot of salted boiling water cook spaghetti until al dente.
- Drain spaghetti well and in a large bowl toss with sauce.
